Winter wonderland on a plate!

These gorgeous little snowballs got the thumbs up from everyone. They didn't last 5 minutes!

They are so soft to bite into through the powdery, white icing sugar.

The best part is when you discover a little bite of mint in among the sweet white chocolate! Oh yes!

White Chocolate


These white chocolate balls are not the traditional Scottish style truffles which are made with crushed biscuits (graham crackers) and coconut. 

Instead, they are a luxury ganache-style truffle made with cream.

White chocolate is notoriously tricky to work with, but if you melt it gently in a bain marie it will melt beautifully.

A bain marie is a bowl that sits above a pan of simmering water. 

The trick is to make sure the bowl sits above the water. If it sits in the water the chocolate will seize and you'll have to start again.




Peppermint Creams


White chocolate can be overly sweet, so the addition of mint in these truffles really cuts through the sweetness and elevates these truffles to a whole new level of gorgeousness.

You need a fondant mint cream for these truffles, but not the type covered in chocolate. They should be firm and powdery but when bitten into they should melt in the mouth. 

DON'T use a hard mint for these truffles, it has to be soft and crumbly.

I used Bassett's Mint Creams for these peppermint truffles.



Help! I Can't Find Peppermint Creams



If you can't find peppermint creams, you can still have that peppermint flavour.

You can use mint crumbles, but they have to be soft enough to crumble.

Alternatively, just add a few drops of peppermint extract to your truffle mix.



What's Better, Peppermint Essence or Peppermint Extract?




When you are baking or making no-bakes for the best flavour you always want to use good quality ingredients.

Essence is an artificial colourful. so is never going to give the best flavour.

With peppermint flavour it can be used in a pinch, but it's not as good as peppermint extract.

Peppermint extract is your best option.

It is high quality and only a few drops will give a good flavour.

Can I Make These White Chocolate Truffles Vegan?


Yes, you can definitely make these vegan.

Simply use vegan white chocolate, vegan cream (the type that whips) and a few drops of peppermint extract.

I've found the Moo dairy-free white chocolate drops melt really well.

White Truffle Toppings




The toppings you roll a truffle in make all the difference to the final presentation.

Here are a few ideas for topping (rolling) these white chocolate peppermint truffles.

  1. Icing sugar - also called confectioner's sugar
  2. Pistachios - roll in finely chopped pistachio nuts
  3. Coconut - roll them in desiccated coconut


How long will these white truffles keep?



These ganache-type truffles are the type that are kept in the fridge until you are ready to serve them.

They will keep for up to a week.

Although, there is no way they will last that long.

These peppermint truffles are very, very moreish.

White Chocolate Truffles with Peppermint

White Chocolate Truffles with Peppermint

A simple recipe for white chocolate truffles with peppermint. A tasty sweet treat that makes an excellent Christmas gift.
Prep time: 15 MinTotal time: 15 Min

Ingredients

  • 125ml (1/2 cup) double cream (or vegan double cream)
  • 150g (5.3 oz) white chocolate broken into pieces (or vegan white choc drops)
  • 25g (0.8 oz) strong hard white peppermints (or a few drops of peppermint extract)
  • pinch of salt
  • Icing sugar for coating

Instructions

  1. Melt the cream and chocolate and a pinch of salt gently for 4-5 mins until the chocolate has melted. Leave to cool. (add the peppermint extract if using)
  2. Whisk the cream mixture until thick and then put in the fridge for 3-4 hours.
  3. Put the mints into a plastic bag and crush, using a rolling pin. Scatter pieces into the cream mixture.
  4. If the mixture is firm enough, roll spoonfuls of the mixture into balls in some icing sugar. If a little soft, chill in fridge or freezer for a while before rolling.
  5. Chill for at least 2 hours before serving.
  6. Enjoy!

    A mixture of white and dark chocolate would be lovely, I may try that myself! I love dark chocolate. Orange, lemon or lime peel would be good with the dark chocolate too!

  3. Ooh, these look tasty. Mac makes something that looks like these except they're dark chocolate truffles with pepper, and they're covered with icing sugar and coconut powder. When we're through reeling from the holiday sugar rush I'll talk him into making some!
